MENU DEVELOPMENT
Not Just Food
Creating a menu involves more than just throwing ingredients together and hoping for the best. It's important to pair flavours that complement and contrast each other, ensuring that no single flavour dominates.
Additionally, the ingredients must be high quality, reasonably priced, and in season.
While many menus feature dishes with intense flavours, simplicity often proves to be more effective.
Make the most of what you have available, using ingredients to their fullest potential. For example, if you desire a subtle aniseed flavour, consider using thinly sliced fennel or fennel tops which enhance the dish without overpowering other components.
